Quality Assurance Associate in Dallas, TX

We are currently seeking an experienced Manager, Product Quality Assurance to join our Quality Assurance Team.

JOB PURPOSE:
To provide indirect supervision to our vendors and kitchen management teams in order to:
. Consistently meet or exceed the standard of FOOD SAFETY to insure the guest experience.
. Gain assurances that all food vendors handle food in a safe and regulated manner.
. Provide feedback and direction for Dave and Buster's food safety, health and hygiene practices.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Others may be assigned.
. Manage auditing company to conduct inspections to ensure that food safety practice and health, hygiene standards are being met.
. Support Purchasing as needed with auditing of potential and existing perishable vendors to ensure that food safety practices are being met.
. Conduct food safety, health and hygiene training classes for MIT's.
. Conduct in store food safety, health and hygiene training classes for RKM's, GM's, AGM F&B's, and KM's.
. Maintain written food safety, health and hygiene compliance guidelines.
. Develop and maintain a HACCP program when/as required by health departments.
. Manage relationship with third party lab to provide D&B with food safety analysis.
. Maintain or manage company to maintain nutrition database for allergens and nutritional information.
. Maintain program to ensure that all regulations are being met for MSDS standards at the store level.
. Maintain program for chemical storage and handling at the store level.
. Organize and conduct shelf-life research and set company standards with regard to food safety, as needed or requested.
. Support Purchasing, R&D/Operations with new product rollouts.
. Support Legal, Risk Management and HR in guest food safety issues and health department issues.
Experience: . BS in Food Science, Chemistry, Microbiology or other related fields. (Dietetics a plus ) . 7-10 years experience in QA in the restaurant industry or food manufacturing . Working knowledge of the FDA and USDA regulations and federal/state/local food code requirements . Working knowledge of HACCP, GMPs, SOPs, SSOPs, GAPs required. Experience in the investigation of product quality and supplier/distributor issues. .Demonstrated excellent written, verbal communication/presentation and computer skills
